Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 3 tablespoons honey
- 3 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Stir in honey and Dijon mustard, cooking for 1 minute. Pour in chicken broth and simmer for 3-4 minutes until slightly thickened.
- Prepare rice according to package instructions, using chicken broth for extra flavor. You can use a rice cooker for convenience.
- Return the cooked chicken to the skillet, spooning sauce over the top. Cover and simmer for 5 minutes to infuse flavors.
- Serve the chicken over the rice, drizzled with extra sauce and garnished with parsley if desired.
Notes
- Use chicken thighs for a juicier option, adjusting cooking time accordingly.
- Ensure the Dijon mustard and rice are gluten-free if necessary.
- Reheat leftovers gently to maintain texture.
