- 2 lbs beef stew meat, cut into chunks
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 2 potatoes, diced
- 1/2 cup chopped cilantro
Instructions
- Heat oil in a large pot over medium-high heat.
- Add beef chunks and brown on all sides, then remove and set aside.
- In the same pot, sauté onion, garlic, and bell pepper until soft.
- Add diced tomatoes, cumin, chili powder, black pepper, and cook for 5 minutes.
- Return beef to the pot, pour in beef broth, and bring to a boil.
- Reduce heat, cover, and simmer for 1.5 hours until beef is tender.
- Add diced potatoes and cook for another 20 minutes until potatoes are soft.
- Garnish with chopped cilantro before serving.
Notes
- Adjust chili powder for desired spice level.
- Serve with warm tortillas or rice for a complete meal.
