  • 2 lbs beef stew meat, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 2 potatoes, diced
  • 1/2 cup chopped cilantro

Instructions

  1. Heat oil in a large pot over medium-high heat.
  2. Add beef chunks and brown on all sides, then remove and set aside.
  3. In the same pot, sauté onion, garlic, and bell pepper until soft.
  4. Add diced tomatoes, cumin, chili powder, black pepper, and cook for 5 minutes.
  5. Return beef to the pot, pour in beef broth, and bring to a boil.
  6. Reduce heat, cover, and simmer for 1.5 hours until beef is tender.
  7. Add diced potatoes and cook for another 20 minutes until potatoes are soft.
  8. Garnish with chopped cilantro before serving.
