Ingredients
- 1 pre-made pizza dough or homemade crust
- 3 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 cup shredded Gruyère cheese (or Swiss cheese)
- ½ cup grated Parmesan cheese
- Fresh thyme sprigs for garnish (optional)
- Optional: a splash of balsamic vinegar for caramelizing onions
Instructions
- Caramelize the onions: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sugar, cooking slowly until deep golden brown, about 25-30 minutes. Season with salt and pepper, then stir in dried thyme and balsamic vinegar if using. Remove from heat and set aside.
- Prepare the pizza base: Spread your pre-made or homemade pizza dough evenly on a baking sheet or pizza pan. Pre-bake at 400°F (200°C) for about 8 minutes to prevent sogginess.
- Assemble the pizza: Spread caramelized onions over the partially baked crust. Top generously with shredded Gruyère and sprinkle Parmesan. Garnish with fresh thyme sprigs if desired.
- Bake the pizza: Bake at 400°F (200°C) for 12-15 minutes until cheese is bubbly and golden brown with crispy edges.
- Serve and garnish: Remove from oven, let sit for a couple of minutes, then garnish with additional thyme if desired. Slice and serve hot.
Notes
- For a vegetarian version, use vegetarian-friendly cheese and ensure your crust contains no animal-derived ingredients.
- Substitute Gruyère with Swiss, mozzarella, or other melting cheeses for a similar savory taste.
- Caramelizing onions takes time, so plan ahead; slow cooking yields best flavor.
- For a low-carb variation, try a cauliflower crust or other keto-friendly bases.
