- 1 lb beef sirloin or flank steak – thinly sliced
- 4 large low-carb tortillas or lettuce wraps
- 1 medium onion – sliced
- 1 bell pepper – sliced
- 2 cloves garlic – minced
- 1 cup shredded provolone or mozzarella cheese
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Slice the beef into thin strips. In a skillet over medium-high heat, add 1 tablespoon of olive oil. Cook the beef until browned, about 3-4 minutes. Season with salt and pepper, then remove from heat and set aside.
- In the same skillet, add the remaining olive oil. Sauté the onion and bell pepper until tender and slightly caramelized, about 5 minutes. Add the minced garlic and cook for another 30 seconds. Mix the cooked vegetables with the beef.
- Lay out the low-carb tortillas or lettuce wraps. Divide the beef and vegetable mixture evenly among them. Sprinkle shredded cheese on top of each filling package.
- Roll the tortillas tightly around the filling. For extra crispiness, pan-fry the rolls in a skillet with a little olive oil until golden brown on all sides, or bake them in a preheated oven at 375°F (190°C) for about 10 minutes.
