  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cooked chicken, rice, black beans, corn, taco seasoning, and half of the cheese.
  3. Transfer mixture to a greased baking dish and top with remaining cheese.
