- 2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 can black beans, drained
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1/2 cup chopped tomatoes
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1 packet taco seasoning
- 1 cup sour cream
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine cooked chicken, rice, black beans, corn, taco seasoning, and half of the cheese.
- Transfer mixture to a greased baking dish and top with remaining cheese.
- Bake for 20-25 minutes until bubbly and golden.
- Remove from oven and garnish with chopped tomatoes, green onions, and cilantro.
- Serve hot with a side of sour cream and tortilla chips.
Notes
- You can substitute cooked turkey or beef for chicken.
- Add jalapeños for extra spice.
- Best enjoyed fresh but can be stored in the fridge for up to 2 days.
