Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 cup of flour and 1/2 cup of powdered sugar. Add the melted butter and stir until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of a greased 9×13 inch baking dish. Bake for 15 minutes until lightly golden.
  2. In a separate bowl, whisk together the eggs, granulated sugar, lemon juice, and lemon zest. In another small bowl, mix 1/4 cup of flour and baking powder. Gradually add the dry ingredients into the wet mixture, stirring until smooth. Pour this lemon filling over the baked crust.
  3. Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm at the edges. Remove from the oven and let cool completely before dusting with powdered sugar and slicing into bars.
