Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 cup of flour and 1/2 cup of powdered sugar. Add the melted butter and stir until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of a greased 9×13 inch baking dish. Bake for 15 minutes until lightly golden.
- In a separate bowl, whisk together the eggs, granulated sugar, lemon juice, and lemon zest. In another small bowl, mix 1/4 cup of flour and baking powder. Gradually add the dry ingredients into the wet mixture, stirring until smooth. Pour this lemon filling over the baked crust.
- Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly firm at the edges. Remove from the oven and let cool completely before dusting with powdered sugar and slicing into bars.

- Ensure the lemon filling is fully set before slicing for clean edges.
- You can add a few drops of yellow food coloring to enhance the sunshine appearance.
- For a more intense lemon flavor, increase lemon juice and zest slightly.
