Instructions

  1. Start by washing and slicing the zucchini into thin rounds or matchstick strips. Mince the garlic, slice the onion, and if using fresh ginger, grate it finely.
  2. Heat the vegetable or olive oil in a large skillet or wok over medium-high heat. Add the beef and cook for 4-5 minutes until browned. Season with salt, pepper, and a splash of soy sauce. Remove from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed and sauté the onion and garlic until fragrant, about 1-2 minutes. Add the grated ginger and red pepper flakes, stirring well to combine.
