- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup vegetable oil
- 2 large eggs
- 1/2 cup canned pumpkin
- 1 teaspoon vanilla extract
- For Cinnamon Swirl:
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a small loaf pan.
- In a bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine oil, eggs, pumpkin, and vanilla. Mix well.
- Pour wet ingredients into dry ingredients and stir until just combined.
- For the cinnamon swirl, mix brown sugar and cinnamon in a small bowl.
- Pour half of the batter into the loaf pan. Sprinkle half of the cinnamon sugar mixture. Top with remaining batter and sprinkle the rest of the cinnamon sugar.
- Use a knife to swirl gently the cinnamon mixture into the batter.
- Bake for 40-45 minutes until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack. Serve sliced and warm.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For extra flavor, sprinkle with powdered sugar before serving.
