  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 packet taco seasoning
  • 4 cups beef broth
  • Shredded cheddar cheese
  • Fresh cilantro, chopped
  • Optional sour cream and tortilla chips for serving

Instructions

  1. In a large pot, cook ground beef until browned. Drain excess fat.
  2. Add diced onions and cook until translucent.
  3. Stir in garlic and cook for 1 minute.
  4. Add diced tomatoes, black beans, corn, taco seasoning, and beef broth. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
