- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans (15 oz), drained and rinsed
- 1 can corn (15 oz), drained
- 1 packet taco seasoning
- 4 cups beef broth
- Shredded cheddar cheese
- Fresh cilantro, chopped
- Optional sour cream and tortilla chips for serving
Instructions
- In a large pot, cook ground beef until browned. Drain excess fat.
- Add diced onions and cook until translucent.
- Stir in garlic and cook for 1 minute.
- Add diced tomatoes, black beans, corn, taco seasoning, and beef broth. Stir well.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot topped with shredded cheese and cilantro. Enjoy with tortilla chips and optional sour cream.
