Instructions

  1. Start by seasoning the chicken breasts generously with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6–7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside to rest, then slice into strips or cubes.
  2. While the chicken cooks, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In the same skillet used for the chicken, add the minced garlic and cook for 1 minute until fragrant. Stir in the chopped sun-dried tomatoes and cook for another 2 minutes. Pour in the heavy cream, then add Parmesan cheese and Italian seasoning, stirring constantly until the sauce thickens slightly. Adjust seasoning with salt and pepper to taste.
  4. Add the cooked pasta and sliced chicken into the skillet, tossing to coat evenly with the creamy sauce. Let everything simmer together for 2–3 minutes to meld the flavors. Finally, garnish with freshly chopped basil or parsley.
