Instructions
- Season the chicken breasts generously with salt, pepper, and Italian seasoning. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 6-7 minutes on each side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream, stirring to combine. Simmer for 2-3 minutes until slightly thickened. Add Parmesan cheese and stir until melted and smooth. Adjust seasoning as needed.
- Return the chicken to the skillet, spoon sauce over, and simmer for 3-4 minutes to meld flavors and keep chicken moist.
