- 12 oz (340 g) of your favorite pasta (penne, spaghetti, or fusilli)
- 200 g block of feta cheese
- 2 cups cherry tomatoes
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- Fresh basil leaves for garnish
- Salt and pepper to taste
- Red pepper flakes (optional, for some heat)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper.
- Place the feta block in the center of the dish, surround with cherry tomatoes, minced garlic, and drizzle with olive oil. Season with salt, pepper, and red pepper flakes if desired.
- Bake for 25-30 minutes until feta is soft and golden, and tomatoes burst with juices.
- Remove from oven, mash feta and tomatoes to create a creamy sauce.
- Cook pasta according to package instructions until al dente.
- Toss the cooked pasta with the feta and tomato sauce, then garnish with fresh basil and additional red pepper flakes if preferred. Serve immediately.
