- burrata cheese (about 8 oz)
- ripe cherry tomatoes (1 cup), halved
- fresh basil leaves (1/4 cup), chopped
- extra virgin olive oil (3-4 tablespoons)
- balsamic glaze (optional, for drizzling)
- salt and freshly ground black pepper to taste
- garlic clove (1), peeled and halved
Instructions
- Preheat your oven to 400°F (200°C). Arrange bread slices on a baking sheet and brush lightly with olive oil. Toast until golden and crispy, about 8-10 minutes. Rub each slice with the cut side of garlic.
- Combine cherry tomatoes, chopped basil, 2 tablespoons of olive oil, salt, and pepper in a bowl. Mix gently.
- Spread burrata cheese generously on each toasted bread slice. Spoon tomato mixture over the cheese. Drizzle with olive oil and balsamic glaze if desired. Garnish with additional basil leaves.
Notes
- Prepare the tomato topping ahead and store in the fridge; toast the bread just before assembling.
- Use fresh mozzarella or ricotta as substitutes for burrata if unavailable.
