Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, melted
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 1 teaspoon vanilla extract
- 2 cups All-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or parchment paper.
- In a large bowl, combine melted butter and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in fresh lemon juice, lemon zest, and vanilla extract until fully incorporated.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually fold the dry ingredients into the lemon mixture until just combined, avoiding overmixing.
- Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes until edges are golden and a toothpick comes out clean.
- Allow to cool completely, then dust with powdered sugar if desired before slicing and serving.
Notes
- Use fresh lemon juice and zest for vibrant flavor.
- Avoid overbaking to keep the bars moist and fudgy inside.
- For vegan options, substitute eggs with flax eggs or applesauce.
- Adding a splash of lemon liqueur enhances the tangy flavor.
