Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange sweet potato slices on the baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast for 20-25 minutes until golden and crispy.
- Remove from oven, drizzle honey over warm sweet potatoes, and sprinkle with feta cheese.
- Garnish with fresh herbs if desired and serve warm.

- Adjust honey for sweetness preference. You can also use maple syrup as a vegan alternative.
