- 200g digestive biscuit crumbs
- 100g unsalted butter, melted
- 500g cream cheese
- 150g granulated sugar
- 3 large eggs
- 100ml honey
- 150g pistachios, chopped
- 1 tsp vanilla extract
- Extra honey and pistachios for topping
Instructions
- Preheat oven to 160°C (320°F). Combine biscuit crumbs and melted butter, press into a springform pan to form the crust. Bake for 10 minutes and let cool.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and honey. Mix until well combined.
- Pour batter over cooled crust, sprinkle chopped pistachios on top. Bake for 50-60 minutes until set.
- Let cool, then refrigerate for at least 4 hours. Drizzle with honey and garnish with extra pistachios before serving.
