Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- 2 tbsp all-purpose flour
- Optional: fresh mint or extra blueberries for garnish
Instructions
- Preheat your oven to 350°F (175°C). Combine graham cracker crumbs with melted butter and press firmly into a lined 9-inch square baking pan to form the crust. Bake for 8-10 minutes until lightly golden, then cool completely.
- In a large bowl, beat softened cream cheese with sugar until smooth. Add eggs one at a time, then vanilla extract. Spread this mixture over the cooled crust.
- Toss blueberries with flour to prevent sinking. Gently fold blueberries into the cream cheese batter or sprinkle on top. For a smoother topping, cook blueberries with sugar to make a compote and swirl into the mixture.
- Bake in the preheated oven for 30-35 minutes until just set. Cool completely in the pan, then refrigerate for at least 2 hours before slicing into squares.
Notes
- Use fresh blueberries for best flavor and vibrant color.
- Ensure cream cheese is softened to blend smoothly.
- Avoid over-baking to keep the bars creamy and tender.
- Chill thoroughly before slicing for neat, clean squares.
