- 2 chicken breasts, boneless and skinless
- 1/4 cup honey
- 2 tablespoons chipotle in adobo sauce, minced
- 2 cloves garlic, minced
- 1 lime, juiced
- 1 cup cooked jasmine rice
- 1 cup diced bell peppers
- 1/2 cup chopped cilantro
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat grill or skillet over medium heat.
- In a small bowl, whisk together honey, chipotle, garlic, lime juice, olive oil, salt, and pepper.
- Brush chicken breasts with the honey chipotle sauce, then grill until cooked through and slightly charred, about 6-7 minutes per side.
- Cook rice according to package instructions if not already prepared.
- Slice the grilled chicken and arrange over a bed of rice in bowls.
- Top with diced bell peppers, cilantro, and a drizzle of additional sauce if desired.
- Serve warm with lime wedges for extra zest.
Notes
- You can substitute chicken with tofu or shrimp for variations.
- Adjust the spice level by more or less chipotle in the sauce.
- For added crunch, include chopped lettuce or avocado slices.
