Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with chili powder, cumin, salt, and pepper.
- Heat olive oil in a skillet over medium heat and sear chicken for 3-4 minutes per side.
- Add sliced peppers around chicken in the skillet.
- Sprinkle cheese evenly over the chicken and peppers.
- Transfer skillet to the oven and bake for 20 minutes, until cheese is melted and bubbly.
- Garnish with fresh cilantro and serve with lime wedges.

- You can substitute the cheese with Monterey Jack or Pepper Jack for extra spice.
