Ingredients
Scale
- 2 cups of all-purpose flour
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of cold unsalted butter, cut into small cubes
- 3/4 cup of buttermilk
- Extra melted butter for the ‘swim’
Instructions
- Preheat your oven to 425°F (220°C). Grease a baking dish or line it with parchment paper.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the cold butter cubes to the dry ingredients. Use a pastry cutter or fingers to incorporate until the mixture resembles coarse crumbs.
- Pour in the buttermilk and gently stir until just combined. Do not overmix.
- Turn the dough onto a floured surface, knead gently a few times, then pat into a 1-inch thick rectangle.
- Cut into squares or rounds and place in the prepared baking dish.
- Pour melted butter generously over the biscuits, ensuring they are submerged or ‘swimming’ in butter.
- Bake for 15-20 minutes until golden brown. Brush with additional melted butter if desired after baking.
Notes
- Use cold butter for flaky layers.
- Do not overmix the dough to keep biscuits light and fluffy.
- For a sweeter version, add honey or cinnamon to the dough.
