- 2 boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 8 ounces pasta (penne or fettuccine)
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Season chicken breasts with Cajun seasoning and salt.
- Heat olive oil in a skillet over medium heat. Cook chicken until browned and cooked through, about 6-8 minutes per side. Remove and slice.
- In the same skillet, sauté bell peppers and garlic until tender, about 3-4 minutes.
- Add heavy cream and Parmesan, stirring until sauce thickens slightly.
- Return chicken to skillet, toss with sauce and vegetables. Serve over cooked pasta.
Notes
- Adjust spice level by adding more Cajun seasoning.
- Use shrimp or tofu for variety.
