Ingredients

  • 4 boneless, skinless chicken breasts, sliced
  • 3 tablespoons Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 ounces penne pasta
  • 1 red bell pepper, sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken and season with Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sliced red bell pepper. Sauté for 2-3 minutes.
  4. Reduce heat to low, pour in heavy cream, and stir in Parmesan cheese. Cook until the sauce thickens, about 3-4 minutes.
  5. Add cooked pasta and chicken to the sauce. Toss to coat evenly. Season with salt and pepper to taste.
