- 1 lb (450g) boneless, skinless chicken breasts, sliced into strips
- 12 oz (340g) of your favorite pasta (penne, fettuccine, or linguine)
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning (adjust spicy level to taste)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Start by slicing the chicken breasts into thin strips, chopping the onion, and slicing the bell pepper. Mince the garlic and set all ingredients aside.
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Add the chicken strips and sprinkle generously with Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add another tablespoon of olive oil if needed. Sauté the chopped onion and sliced bell pepper until softened, about 3-4 minutes. Add minced garlic and cook for another 1 minute until fragrant.
- Reduce heat to medium. Pour in the heavy cream and stir to combine. Add grated Parmesan cheese and mix until the sauce is smooth and creamy. Season with salt and black pepper to taste.
- Return the cooked chicken to the skillet, then add the cooked pasta. Toss everything together until well coated with the creamy Cajun sauce. Let it simmer for 2 minutes to meld flavors.
