  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 pound boneless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon cajun seasoning
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Add chicken pieces, season with cajun seasoning, salt, and pepper; cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same pan, sauté onion, garlic, and red bell pepper until softened, about 3-4 minutes.
  4. Add orzo and cook for 1-2 minutes, stirring to coat with spices.
  5. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes, stirring occasionally.
  6. Return cooked chicken to the pan, stir to combine, and cook an additional 2-3 minutes until heated through.

Notes

  • Adjust cajun seasoning for spiciness preference.
  • Cook orzo until just tender to prevent mushiness.
  • Garnish with chopped green onions or parsley for extra flavor.
