- 1 red bell pepper, sliced
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 teaspoon smoked paprika

Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add chicken pieces, season with cajun seasoning, salt, and pepper; cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same pan, sauté onion, garlic, and red bell pepper until softened, about 3-4 minutes.
- Add orzo and cook for 1-2 minutes, stirring to coat with spices.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes, stirring occasionally.
- Return cooked chicken to the pan, stir to combine, and cook an additional 2-3 minutes until heated through.

- Garnish with chopped green onions or parsley for extra flavor.
