- 2 lbs boneless, skinless chicken breasts or thighs
- 4 cups sweet corn kernels (fresh or frozen)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 medium potatoes, diced
- 4 cups chicken broth
- 1 cup heavy cream or milk
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- Salt to taste
- Optional toppings: chopped green onions, shredded cheese, crispy bacon
Instructions
- Chop the onion, garlic, and potatoes. Prepare the corn as needed.
- Place chicken in the bottom of the slow cooker. Add onions, garlic, potatoes, and corn.
- Pour in chicken broth and season with smoked paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- Remove chicken, shred with forks, then return to the slow cooker.
- Stir in heavy cream or milk, then simmer uncovered for 15 minutes to thicken.
- Taste and adjust seasoning. Serve hot with optional toppings.
Notes
- Use canned corn if fresh or frozen is unavailable; drain excess liquid.
- You can substitute heavy cream with milk for a lighter version.
- For extra flavor, add diced carrots, celery, or bell peppers.
