  • 2 lbs boneless, skinless chicken breasts or thighs
  • 4 cups sweet corn kernels (fresh or frozen)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 medium potatoes, diced
  • 4 cups chicken broth
  • 1 cup heavy cream or milk
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • Salt to taste

Instructions

  1. Chop the onion, garlic, and potatoes. Prepare the corn as needed.
  2. Place chicken in the bottom of the slow cooker. Add onions, garlic, potatoes, and corn.
  3. Pour in chicken broth and season with smoked paprika, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  5. Remove chicken, shred with forks, then return to the slow cooker.
  6. Stir in heavy cream or milk, then simmer uncovered for 15 minutes to thicken.
  7. Taste and adjust seasoning. Serve hot with optional toppings.

  • Use canned corn if fresh or frozen is unavailable; drain excess liquid.
