Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, allowing some overhang for easy removal.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
- In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs one at a time, whisking well after each addition. Stir in vanilla extract, lemon zest, and lemon juice until fully incorporated.
- Gently fold in the chopped strawberries into the wet mixture, being careful not to crush the berries.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Allow the blondies to cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely. Slice into squares and optionally dust with powdered sugar.
