- 1.5 lbs boneless, skinless chicken breasts or thighs
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth

Instructions
- Heat olive oil in a skillet and brown the chicken slightly, then transfer to the slow cooker.
- Add chopped vegetables and minced garlic to the slow cooker.
- Pour in chicken broth and add herbs, salt, and pepper.
- Cover and cook on low for 6-8 hours until chicken is tender and vegetables are cooked.
- Shred the chicken with two forks before serving, if using breasts.
Notes
- You can add peas or green beans in the last 30 minutes for extra color and flavor.
- Use bone-in chicken for more flavor, adjusting cooking time accordingly.
