- 1 pound ground beef or turkey
- 1 small onion, diced
- 2 cups chopped vegetables (optional, e.g., bell peppers or mushrooms)
- 1 can cream of mushroom soup or cream of chicken soup
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 1 bag of frozen tater tots (about 32 ounces)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat oil over medium heat. Add diced onion and cook until translucent. Add ground beef or turkey, season with garlic powder, salt, and pepper, and cook until browned. Drain excess fat.
- In a mixing bowl, combine cooked meat, cream of mushroom soup, sour cream, and vegetables if using. Mix until smooth.
- Preheat oven to 375°F (190°C). Spread meat mixture evenly in a greased 9×13-inch baking dish.
- Sprinkle two-thirds of shredded cheese over the meat mixture. Layer frozen tater tots on top, then sprinkle remaining cheese over the tots.
- Bake uncovered for 35-40 minutes until tater tots are golden brown and crispy. Let rest for a few minutes before garnishing with parsley and serving.
Notes
- Feel free to swap cheddar cheese with pepper jack or Monterey Jack for extra flavor.
- This casserole freezes well—prepare, assemble, and freeze before baking. Bake directly from frozen, adding 10-15 extra minutes.
