Ingredients
Scale
- 3 ripe bananas, mashed
- 2 large eggs
- 1/4 cup honey or maple syrup (optional for added sweetness)
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour or almond flour for a gluten-free option
- 1/2 cup unflavored or vanilla protein powder (preferably whey or plant-based)
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: 1/2 cup chopped nuts or dark chocolate chips for extra texture
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper to prevent sticking. Set aside.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add eggs, honey or maple syrup (if using), almond milk, and vanilla extract to the mashed bananas. Whisk everything together until well combined.
- Gradually add the flour, protein powder, baking soda, baking powder, and salt. Mix gently until you obtain a smooth batter. Fold in nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan. Smooth the top with a spatula.
- Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean. Allow the bread to cool before slicing.
Notes
- Optional mix-ins like nuts or chocolate chips add texture and flavor.
- Use ripe bananas for optimal sweetness and moisture.
- Adjust sweetener based on your taste preferences.
