- 2 large sweet potatoes, sliced
- 1 pound ground turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly oil a baking dish.
- Slice sweet potatoes thinly and layer half of them in the dish.
- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; cook until translucent.
- Add ground turkey, paprika, thyme, salt, and pepper. Cook until turkey is browned and cooked through.
- Spread the turkey mixture over the sweet potato layer.
- Top with remaining sweet potato slices and sprinkle cheese evenly over the top.
- Bake for 30-35 minutes until sweet potatoes are tender and cheese is bubbly and golden.
- Garnish with fresh parsley before serving.

- You can swap cheese for a dairy-free alternative for a vegan version.
- For added flavor, sprinkle red pepper flakes or add sliced bell peppers.
