- 4 boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup chopped fresh cilantro (optional)
- Juice of 1 lime
- Optional: sliced jalapeños for extra spice
Instructions
- Start by seasoning the chicken breasts with salt, pepper, smoked paprika, cumin, and chili powder. Set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and sear until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, add the chopped red onion and bell peppers. Cook until tender and slightly caramelized, about 5-7 minutes. Add minced garlic during the last minute for aroma.
- Slice the cooked chicken into strips and return to the skillet. Sprinkle with shredded cheddar cheese and cover to melt the cheese thoroughly.
- Once melted, squeeze fresh lime juice over the skillet and sprinkle with chopped cilantro if desired. Add sliced jalapeños for spicy kick.
