  • 20 oz (567g) refrigerated or frozen tortellini
  • 2 cups (480ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1 cup (120g) grated Parmesan cheese
  • 1 cup (150g) cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Place chicken breasts in the slow cooker, season with salt, pepper, and Italian seasoning.
  2. Add chicken broth and cook on low for 4-6 hours until chicken is tender and cooked through.
  3. Remove chicken, shred it with two forks, and return to the slow cooker.
  4. Add heavy cream, Parmesan, cherry tomatoes, and garlic. Stir well.
