- 2 chicken breasts, diced or sliced
- 1/4 cup mayonnaise or Greek yogurt (for the sauce)
- 2 tbsp sriracha or other hot sauce
- 1 tbsp honey or maple syrup
- 2 cups cooked jasmine rice or brown rice
- 1 cup shredded carrots
- 1 cucumber, sliced
- 1/4 cup chopped green onions
- Sesame seeds for garnish
- Oil for cooking
Instructions
- In a small bowl, whisk together mayonnaise, sriracha, and honey to create the bang bang sauce. Adjust spice level as desired.
- Heat a skillet with oil over medium-high heat. Add the diced chicken and cook until golden brown and cooked through, about 6-8 minutes.
- Once cooked, toss the chicken with the prepared bang bang sauce until evenly coated.
- Start with a bed of rice in bowls, add the spicy chicken, shredded carrots, cucumber slices, and green onions.
- Garnish with sesame seeds and drizzle additional sauce if preferred. Serve immediately.
Notes
- For a richer flavor, add a splash of soy sauce or rice vinegar to the sauce.
- You can prepare ingredients separately and store them in airtight containers for meal prep.
