- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with paprika, oregano, salt, and pepper.
- Cook chicken until golden brown and cooked through, about 6-8 minutes per side. Remove and set aside.
- In the same skillet, sauté garlic and peppers until tender, about 5 minutes.
- Return chicken to skillet, sprinkle with shredded cheese, and cover until cheese melts.
- Garnish with chopped parsley and serve hot.

- Feel free to add sliced onions or jalapeños for extra flavor and heat.
- Serve with rice or crusty bread for a complete meal.
