Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced smoked sausage and cook until browned, about 5 minutes.
- Stir in chopped onion and bell pepper; cook until softened, about 3 minutes.
- Add minced garlic and cook for 1 minute.
- Pour in chicken broth, add rice, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.
- Garnish with fresh parsley before serving.
