- 4-5 medium potatoes, diced (russet or Yukon gold)
- 1 pound sausage (your choice of spicy or mild)
- 1/2 cup shredded cheddar cheese
- 1 packet ranch seasoning mix (about 1 oz)
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Chopped fresh parsley for garnish (optional)
Instructions
- Wash and dice the potatoes into bite-sized pieces and toss with 1 tablespoon of olive oil, garlic powder, and black pepper.
- In a large skillet over medium heat, add the sausage and cook until browned and cooked through. Remove the sausage from the skillet.
- Add the remaining 1 tablespoon of olive oil to the skillet, then add the diced potatoes and cook until crispy and golden brown, about 8-10 minutes.
- Return the cooked sausage to the skillet with the potatoes. Sprinkle the ranch seasoning mix over the mixture and stir to coat.
- Sprinkle shredded cheddar cheese over the top, cover, and let it sit for 2-3 minutes until the cheese melts.
Notes
- Let leftovers cool completely before storing in an airtight container in the fridge for up to 3 days.
- Reheat in the microwave or on the stove, adding extra cheese or ranch seasoning if desired.
- Pairs well with a fresh green salad, garlic bread, or steamed vegetables.
