- 2 cups of graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh peaches, sliced
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- Optional: honey or agave syrup for extra sweetness
Instructions
- Prepare the graham cracker crust by crushing the graham crackers and mixing with melted butter. Press into a springform pan and refrigerate.
- In a bowl, beat cream cheese until fluffy. Gradually add powdered sugar and vanilla extract, mixing well.
- In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Pour the filling over the chilled crust and smooth the top. Decorate with fresh peaches and mixed berries.
- Chill the cheesecake in the refrigerator for at least 4 hours or overnight to set.
Notes
- To store the cheesecake, cover it tightly and refrigerate for up to 2 days, or freeze for 1 month.
- For best presentation, add fresh fruit just before serving.
- Thaw frozen fruits and drain excess moisture before using.
