Ingredients
Scale
- 2 cups chopped apples (such as Fuji or Granny Smith)
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 sheet refrigerated pie crust or homemade crust
- 1 tablespoon melted butter
Instructions
- Preheat your oven to 375°F (190°C). Grease a muffin tin.
- In a bowl, toss chopped apples with sugar, cinnamon, and vanilla until well coated.
- Cut the pie crust into 12 circles large enough to line each muffin cup.
- Press the crust circles into the muffin tin to form little cups.
- Spoon the apple mixture into each crust-lined cup, dividing evenly.
- Cut small strips of pie crust to top each muffin, or leave open-faced for a rustic look.
- Brush the tops with melted butter for a shiny, golden finish.
- Bake for 20-25 minutes until the crust is golden and apple filling is bubbly.
- Cool slightly before removing from the tin. Serve warm or at room temperature.
Notes
- Use tart apples for a balanced sweetness and tartness.
- For added crunch, sprinkle with granulated or turbinado sugar before baking.
