Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, beat the softened butter and sugar until creamy. Add the egg and vanilla extract, mixing until well combined. Gradually incorporate the dry ingredients until the dough forms a cohesive ball. Chill the dough for about 30 minutes.
- In a small bowl, combine brown sugar and ground cinnamon for the filling. Divide chilled dough in half, roll each into a ¼ inch thick rectangle on a floured surface. Spread half of the cinnamon-sugar mixture over each rectangle.
- Carefully roll each rectangle tightly, then slice into ¾-inch thick cookies. Place on a lined baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes until edges are golden brown. Cool on a wire rack and optionally dust with powdered sugar or drizzle with glaze.

- Chilling the dough helps keep its shape when slicing.

- If the dough becomes too soft, chill again for a few minutes.
