- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup whiskey
- 1 cup heavy cream
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown. Remove and set aside.
- In the same skillet, add chopped onion and garlic, sauté until translucent.
- Pour in whiskey, scrape the bottom of the skillet to deglaze, and simmer until reduced by half.
- Stir in heavy cream and Dijon mustard, cook until the sauce thickens.
- Return chicken to the skillet, simmer for an additional 10 minutes to absorb flavors.
- Garnish with fresh parsley and serve hot.
Notes
- For extra flavor, add a splash of Irish whiskey just before simmering.
- Serve alongside mashed potatoes or crusty bread to soak up the sauce.
