Ingredients
- 1 cup fresh blueberries
- 2 cups Greek yogurt (plain or vanilla flavored)
- 2 tablespoons honey or maple syrup (optional)
- 1/2 teaspoon vanilla extract (optional)
- Fresh mint leaves (for garnish, optional)
Instructions
- Combine Greek yogurt with honey or maple syrup and vanilla extract until smooth.
- Blend half of the blueberries until smooth in a blender or food processor.
- Gently fold the blended blueberries into the yogurt mixture to create a swirl effect.
- Fold in the remaining whole blueberries for added texture and flavor.
- Spoon the mixture into silicone molds or mini muffin tins lined with paper liners.
- Use a toothpick or skewer to swirl the blueberries into the yogurt for a marbled look.
- Place the molds in the freezer for at least 4 hours until firm.
- Carefully pop out the bites and store in an airtight container in the freezer.
Notes
- Use frozen blueberries, thawed slightly, as a substitute for fresh berries.
- For vegan options, replace Greek yogurt with coconut or almond yogurt and honey with agave or maple syrup.
- To soften before serving, refrigerate the frozen bites for 30 minutes for a chewier texture.
