- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 garlic cloves, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable or chicken broth
- 1 package (9 ounces) tortellini
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15 minutes to allow flavors to meld.
- Add tortellini and cook according to package instructions, about 3-5 minutes.
- Taste and adjust seasonings as needed.
- Serve hot, garnished with fresh basil and grated Parmesan cheese.
Notes
- You can use fresh tortellini or frozen. Adjust cooking time accordingly.
- Add more herbs for flavor depth.
- Great with crusty bread on the side.
