Ingredients

  • 1 pound Italian sausage
  • 1 package (9 oz) tortellini
  • 4 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup diced celery
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil and grated Parmesan for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, then remove and set aside.
  2. In the same pot, add onions, carrots, and celery. Sauté until vegetables are tender.
  3. Add garlic and cook for another minute.
  4. Return sausage to the pot, add chicken broth, dried basil, salt, and pepper. Bring to a boil.
  5. Reduce heat and add tortellini. Cook until tortellini are tender, about 3-4 minutes.
  6. Serve hot, garnished with fresh basil and grated Parmesan cheese.

Notes

  • You can use mild or spicy sausage based on your preference.
  • For a creamier texture, add a splash of heavy cream before serving.
