- 1 pound Italian sausage
- 1 package (9 oz) tortellini
- 4 cups chicken broth
- 1 cup chopped carrots
- 1 cup diced celery
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil and grated Parmesan for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, then remove and set aside.
- In the same pot, add onions, carrots, and celery. Sauté until vegetables are tender.
- Add garlic and cook for another minute.
- Return sausage to the pot, add chicken broth, dried basil, salt, and pepper. Bring to a boil.
- Reduce heat and add tortellini. Cook until tortellini are tender, about 3-4 minutes.
- Serve hot, garnished with fresh basil and grated Parmesan cheese.
Notes
- You can use mild or spicy sausage based on your preference.
- For a creamier texture, add a splash of heavy cream before serving.
