  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 ounces pasta (rotini or penne)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, cook ground beef and diced onion over medium heat until browned. Add minced garlic and cook for another minute.
  2. Pour in beef broth, tomato sauce, diced tomatoes, Italian seasoning, and red pepper flakes. Stir well and bring to a boil.
  3. Add pasta to the soup and cook until al dente, about 10 minutes.
  4. Reduce heat to low and stir in shredded mozzarella and grated Parmesan cheese until melted and creamy.
  5. Serve hot, garnished with fresh basil and additional cheese if desired.
