- 1 pound ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 8 ounces pasta (rotini or penne)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large pot, cook ground beef and diced onion over medium heat until browned. Add minced garlic and cook for another minute.
- Pour in beef broth, tomato sauce, diced tomatoes, Italian seasoning, and red pepper flakes. Stir well and bring to a boil.
- Add pasta to the soup and cook until al dente, about 10 minutes.
- Reduce heat to low and stir in shredded mozzarella and grated Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh basil and additional cheese if desired.
Notes
- For added flavor, include a splash of red wine during simmering.
- Use gluten-free pasta to make it gluten-free.
- You can substitute ground turkey or chicken for beef.
