- 1 lb ground beef or Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef or vegetable broth
- 1 teaspoon Italian seasoning
- 8 oz lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- In a large pot, cook ground beef or sausage over medium heat until browned. Drain excess fat.
- Add diced onion and minced garlic; cook until softened.
- Pour in crushed tomatoes and broth, stir in Italian seasoning, and bring to a boil.
- Add broken lasagna noodles; reduce heat and simmer for 10-12 minutes until noodles are tender.
- Stir in shredded mozzarella and grated Parmesan until melted and creamy.
- Serve hot garnished with fresh basil leaves and extra cheese if desired.

- You can use turkey or chicken sausage as a healthier option.
- Adjust the amount of cheese for a cheesier soup.
