- 1 pound ground beef
- 1 cup tortellini (fresh or frozen)
- 4 cups beef or chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 small onion, chopped
- 2 cloves garlic, minced

- Salt and pepper to taste
- Fresh parsley, chopped

Instructions
- Preheat your oven to 400°F (200°C). In a bowl, mix ground beef with salt, pepper, and Italian seasoning. Form into small meatballs and place on a baking sheet. Bake for 15 minutes until cooked through.
- While meatballs bake, heat broth in a large pot over medium heat. Add chopped onion and minced garlic; cook until softened.
- Add diced tomatoes and cooked meatballs to the broth. Bring to a simmer and cook for 5 minutes.
- Stir in tortellini and cook for an additional 3-5 minutes until tender.
- Garnish with chopped parsley and grated Parmesan cheese before serving.

- Use frozen meatballs for quicker prep if desired.
