- 4 medium-sized potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (optional for added color)
- 2 tablespoons olive oil

- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Start by peeling and dicing the potatoes into bite-sized pieces. Chop the onion and bell pepper, and mince the garlic. Having all ingredients prepped makes cooking smoother.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 8-10 minutes until golden and crispy, stirring occasionally. Remove and set aside.
- In the same skillet, add the remaining tablespoon of olive oil if needed. Sauté the chopped onion and bell pepper until softened, about 3-4 minutes. Add the minced garlic and cook for another minute. Add the ground turkey, breaking it apart with a spatula. Season with paprika, thyme, salt, and pepper. Cook until browned and cooked through, about 7-9 minutes.
- Return the cooked potatoes to the skillet with the turkey mixture. Toss everything together and cook for an additional 2-3 minutes to blend flavors. Garnish with parsley if desired.
