- 1 pound Italian sausage links or ground sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 teaspoon Italian seasoning
- 9 ounces refrigerated or frozen tortellini
- 2 cups fresh spinach or kale
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Brown the sausage in a skillet over medium heat, then transfer to the slow cooker.
- Add chopped onion, minced garlic, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper to the slow cooker.
- Cover and cook on low for 4 hours.
- Add tortellini during the last 30 minutes of cooking.
- Stir in the spinach or kale and cook until wilted.
- Serve hot topped with grated Parmesan cheese.
Notes
- You can substitute spinach with kale or arugula for different greens.
- For a spicier version, add red pepper flakes.
- Adjust seasoning according to taste.
