  • Total Time: approximately 6 hours 15 minutes to 8 hours 15 minutes
  • Yield: 6-8 servings

Ingredients

Scale
  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or vegetable broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 8 lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the ground beef or Italian sausage over medium heat until browned. Drain excess fat and transfer to the crockpot.
  2. In the same skillet, sauté chopped onions and minced garlic until translucent. Add to the crockpot.
  3. Pour crushed tomatoes, broth, Italian seasoning, dried basil, salt, and pepper into the crockpot. Stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 20 minutes before serving, add broken lasagna noodles and cook until tender.
  6. In the last few minutes, sprinkle shredded mozzarella and Parmesan cheese on top, letting them melt into the soup.
  7. Garnish with fresh basil or parsley and serve hot with bread or salad.

Notes

  • Adjust seasoning to your taste, adding red pepper flakes for extra heat.
  • Use high-quality beef or sausage for richer flavor.
  • Cut noodles into smaller pieces for easier eating, especially with kids.
  • Stir in extra cheese or a splash of cream for a cheesier soup.
