- 1 pound ground beef or Italian sausage
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef or vegetable broth
- 1 teaspoon Italian seasoning
- 1 teaspoon dried basil
- 8 lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh basil or parsley for garnish
- Salt and pepper to taste
Instructions
- In a skillet, cook the ground beef or Italian sausage over medium heat until browned. Drain excess fat and transfer to the crockpot.
- In the same skillet, sauté chopped onions and minced garlic until translucent. Add to the crockpot.
- Pour crushed tomatoes, broth, Italian seasoning, dried basil, salt, and pepper into the crockpot. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 20 minutes before serving, add broken lasagna noodles and cook until tender.
- In the last few minutes, sprinkle shredded mozzarella and Parmesan cheese on top, letting them melt into the soup.
- Garnish with fresh basil or parsley and serve hot with bread or salad.
