A flavorful and hearty crockpot lasagna soup combining rich tomato broth, tender pasta, and melted cheese topped with fresh basil.

Ingredients

  • 1 pound ground beef (or sausage)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 8 ounces (about 2 cups) lasagna noodles, broken
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a skillet, cook ground beef with chopped onion until browned. Drain excess fat.
  2. Add garlic and cook for 1 minute. Transfer to the crockpot.
  3. Pour in crushed tomatoes, broth, oregano, and basil. Stir well.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Add broken noodles during the last 30 minutes of cooking and stir.
  6. Once noodles are tender, sprinkle shredded mozzarella and grated Parmesan on top. Cover briefly until cheese melts.
  7. Garnish with fresh basil and serve hot.
